Taco Rice

I think this one’s a Japanese modified dish originally from Okinawa.

The ingredients are basically the same as the ingredients with a typical Mexican taco but it’s just on top of rice. It’s like a Japanese version taco.

It’s very easy to make so I hope you enjoy it!!


 

Ingredients (2servings)

-250g minced beef

-1/2 onion

-30g lettuce

-1 tomato

-10g corn

-1 tbsp nutmeg

-rice (basmati rice preferred)

-mayo

-cheese

-salsa (any salsa that you can find in the market)

-parsley flakes

☆Seasoning for the taco meat

-1 tbsp sweet chilli sauce

-3 tbsp ketchup

-3 tbsp sriracha sauce

-2 tbsp curry powder

-salt and pepper for adjustment

 

Method

1.Finely chop the onions , cut the lettuce into thin strips, and cut the tomato into small dices.

2.Season the minced beef with nutmeg and then pan fry it without adding oil to the pan and cook until brown. Then, cook the minced onion until it becomes transparent. (the beef and the onion will release its juice so no cooking oil needed. Just a little bit healthier.)

3.After it is cooked, add all of the ingredients to season the taco meat. Since you will add some salsa to it, you don’t have to make it too spicy. (the proportion of the seasoning is based on my preference. I like it spicy but make sure that you always taste it until you find your desired taste while cooking.)

4.If you have a small Japanese bowl like this, put the cooked basmati rice into it and then flip it over to another bigger bowl. Decorate the bowl with lettuce, tomatoes, corn.

5.Top it up with the taco meat and finish it off with some mayonnaise, salsa, grated cheese and parsley flakes in this order.

Then it’s ready to go!

(If you have, you can enjoy it with some tortilla chips!)

You can also add some diced avocado to this dish and it will become more enjoyable!

Make sure you don’t overcook the rice:)

Shrimp and Avocado with Spicy Mayo

Today’s dinner recipe! Shrimp and Avocado with Spicy Mayo.

 

We had sushi with Sushi! lol (Our puppy)

Ingredients:

This is all you need!!

-1 Avocado

-8Fresh shrimps

-4 tablespoon of mayonnaise (Kewpie mayonnaise preferred)

-3 tablespoon of sriracha sauce

-1 tablespoon of wasabi

-Seaweed paper (If you want to make a handroll)

-Rice

 

Method:

1. Make the sauce first: Mix the mayo, sriracha, and wasabi into a bowl until the color becomes nice and orange-ish. Don’t try to make it too spicy at this point.

2. Take off the shell, head, and vein of the shrimp and cut it into small              pieces. (About 1cm)

3. Boil the shrimp for about 1min and drain it. (Don’t cook it too long               otherwise it will become too firm.)

4. Cut the avocado into small pieces as well.

5. Mix the shrimp, avocado, and spicy mayo in a bowl until it is all                     coated. Adjust the taste.

6. Finished. Very easy.


 

If you prefer to eat it as a handroll sushi, just put rice and the spicy shrimp and avocado on the seaweed paper and wrap it! It doesn’t have to be perfect!
